Serves 4 Ingredients:
  • 5 eggs
  • ½ cup whole milk
  • 1 tablespoon Dijon mustard
  • 1 cup Country Hearth Unseasoned Croutons
  • ½ cup smoked deli turkey, chopped
  • ½ cup shredded Swiss cheese
  • ¼ cup jarred roasted red pepper, drained and chopped
  • ¼ cup scallion, finely chopped (green top only)
Directions: Preheat oven to 350° In a large bowl, whisk together eggs, milk and mustard. Add croutons, turkey, ¼ cup of the cheese, half of the peppers and half of the scallions. Pour the mixture into a greased 9-inch pie plate. Sprinkle with remaining cheese, peppers and scallions. Bake for approximately 25 minutes or until the frittata is golden and the eggs are set. Cool for 5 minutes. Loosen edges with a spatula, cut in wedges and serve.
