Yield: 8 – 12

Ingredients:

  • 1 loaf Country Hearth English Muffin Toasting Bread
  • 4 cups whole milk
  • 3 eggs
  • 1 cup sugar
  • 1½ tablespoons vanilla
  • 1 teaspoon cinnamon
  • One-half teaspoon nutmeg
  • One-fourth teaspoon ground ginger
  • 4 large ripe bananas, mashed
  • One-half cup chopped walnuts
  • One-half cup semi-sweet chocolate chips
  • Whipped cream

Directions:

Heat oven to 325°

Cut bread into half-inch-inch cubes and place in large bowl. Add the milk and allow to rest for an hour.

In a separate bowl, beat together the eggs, sugar, vanilla, cinnamon, nutmeg and ginger. Stir in mashed bananas, nuts, chips and bread mixture.

Pour into a lightly greased 9×13 glass baking dish and bake for 40-45 minutes or until edges are golden and a knife inserted in the center comes out clean. Cool and serve with whipped cream.
