Serves 4 – 5
  •   1½ cups milk
  •   1½ cups soft bread crumbs
  •   1/2 cup flour
  •   2 teaspoons baking powder
  •   1/2 teaspoon salt
  •   1 egg, well beaten
  •   2 tablespoons honey
  •   1 tablespoon melted butter
  Directions: Heat milk for a minute or two in the microwave and pour over bread crumbs. Let stand for 15 minutes. Sift flour, baking powder and salt. Add to crumb mixture along with the egg, honey and butter. Beat until well blended and lump-free. Drop batter by tablespoonfuls onto hot, oiled griddle. Cook until bubbles start to pop on top, flip and cook until golden brown. Serve with butter and syrup or jam, or top with fruit pie filling and whipped cream.
