Yield: 4 sandwiches Ingredients:
  • 1 small red apple, cored and diced (leave peel on)
  • ½ teaspoon lemon juice
  • 1 cup roasted turkey, cut into bite size pieces
  • ½ cup diced celery
  • 2 tablespoons chopped walnuts
  • 4 tablespoons mayonnaise
  • 2 tablespoon plain yogurt
  • 1/8 teaspoon nutmeg
  • 1/8 teaspoon cinnamon
  • ¼ teaspoon salt
  • 4 lettuce leaves
  • 8 slices Country Hearth Cinnamon Raisin Bread, toasted
Directions: In a medium-size bowl toss apple with lemon juice to prevent browning. Add turkey, celery, walnuts, mayonnaise, yogurt, nutmeg, cinnamon and salt. Gently stir until well blended. Cover and refrigerate at least 1 hour or preferably overnight to meld flavors. To assemble sandwiches place a lettuce leaf on 4 slices of toast, top with 1/4 of turkey mixture and remaining toast slices.
