Heat a cast iron skillet over medium heat. Add the bacon and cook until crispy, stirring occasionally. Remove the bacon from the skillet and drain the excess grease from the pan, leaving about one tablespoon.
Add the diced onion and cook until softened, about 10 minutes. Add the garlic and cook for about one more minute. Add back the bacon, along with the remaining ingredients. Stir to combine and simmer on low heat for about 10-15 minutes until the jam starts to thicken. Shut off the heat and let it continue to cool off. It will thicken even more as it does so. Serve on burgers. - 1 pound bacon, diced

- 3 cloves garlic, minced
- 1/4 cup real maple syrup
- 1 tablespoon molasses
- 1/4 cup apple cider vinegar
- 1/4 cup brewed coffee
- 3 tablespoons dark brown sugar
- 1/8 teaspoon (or more) Cayenne pepper
