Serves 4 Ingredients:
  •   1 clove garlic
  •   1 package Village Hearth buns, left out overnight to dry
  •   1 cup chopped tomatoes
  •   1 medium red onion, cut in wedges, then sliced
  •   ½ cup ripe olives
  •   1 clove garlic, minced
  •   2 cups chopped fresh basil
  •   1/8 cup chopped fresh thyme
  •   1/4 cup olive oil
  •   2 tablespoons balsamic vinegar
 
Directions: Rub a peeled garlic clove around a wooden salad bowl. Pull apart or chop the buns into bite-sized pieces. Toast on a cookie sheet in a 350° oven until lightly browned. In the prepared salad bowl, combine the buns, tomatoes, red onions, olives, garlic, basil and thyme. Add enough olive oil and vinegar to lightly coat, toss and serve.
