  • 1 pound flaked, cooked cod
  • 1½ cups soft bread crumbs
  • 3 large eggs, beaten
  • 1 medium onion, chopped
  • 1½ teaspoons Djon mustard
  • 1 teaspoon dried parsley flakes
  • 3/4 teaspoon salt
  • 2 tablespoons vegetable oil
  • Tartar sauce and lemon wedges, optional
Directions: In a medium bowl, combine the first nine ingredients, mixing well. Chill for 15 minutes. Shape mixture into 12 patties, wetting hands if needed. In a large skillet, cook the patties in oil for 4-5 minutes on each side until browned and crispy. Serve immediately with tartar sauce and lemon (optional).
