Yield: 4 sandwiches Ingredients:
  • 2 tablespoons butter
  • 8 slices Artisan Hearth Rustic White Bread
  • 8 slices deli ham
  • 2 1/2 cups grated Gruyere cheese, divided
  • 1/2 cup grated parmesan cheese
  • 8 eggs, cooked over-easy
  • Béchamel Sauce, recipe follows
Directions: Heat oven to 400 degrees. Line a baking sheet with parchment paper.
Melt 2 tablespoons butter in a large skillet over medium heat and brown 4 slices of bread on 1 side, about 4 minutes. Place browned bread on prepared baking sheet, browned side down.
Spread each slice with Béchamel sauce. Place two slices of ham on the béchamel and top with 1/2 cup of the grated Gruyere cheese. Place remaining bread slices on top of each sandwich. Spread the remaining Béchamel on top of each sandwich. Sprinkle with parmesan and remaining Gruyere cheese. Bake in preheated oven for 5 to 7 minutes until cheese is melted and beginning to brown. Top each sandwich with 2 over-easy eggs.
Béchamel Sauce:
Ingredients:
  • 1 1/2 cups milk
  • 1/2 cup heavy cream
  • 3 tablespoons butter
  • 3 tablespoons all-purpose flour
  • 1/4 teaspoon salt
  • 1/8 teaspoon ground black pepper
  • 1/4 teaspoon dry mustard
Directions: Combine milk and cream in a glass bowl and microwave on high for 90 seconds.
Melt 3 tablespoons butter in a small saucepan over medium heat. Whisk in flour until all the butter is absorbed by the flour. Cook for about 2 minutes until mixture begins to bubble. Gradually whisk in warmed milk and cream. Cook until sauce begins to thicken, stirring constantly. Continue cooking 3 to 5 minus until the sauce is thick and bubbly. Remove from heat. Whisk in salt, pepper, and mustard.
