•   8 slices Kids’ Choice Bread, crusts removed
  •   2 tablespoons vinegar
  •   2 cups whole milk
  •   1 cup all purpose flour
  •   1 tablespoon baking powder
  •   1 1/2 teaspoon baking soda
  •   1/2 teaspoon salt
  •   2 eggs
  •   1/4 cup granulated sugar
  •   1 teaspoon vanilla extract
  •   4 tablespoons melted butter
  •   cooking spray
  •   mini chocolate chips
Directions: Pulse bread slices in food processor until you have coarse crumbs. Add vinegar to milk, let set for one minute. Pour over bread crumbs. Stir to combine. Set aside for 15 minutes. Meanwhile, Sift together flour, baking powder, baking soda, and salt. In a separate bowl, whisk together eggs, sugar, vanilla, and butter. Add flour mixture to bread crumb mixture. Stir in egg mixture until smooth. Spray hot griddle with cooking spray. Ladle batter onto hot, oiled griddle, approximately 4″ inch circles. Sprinkle with chocolate chips. Cook until bubbles form on top and edges begin to brown. Flip and cook until golden. Serve with butter and syrup, or whipped cream and additional chips.
