Makes 4 sandwiches Ingredients:
  • 8-oz block extra-sharp cheddar cheese, grated (not packaged shredded)
  • 2-oz softened cream cheese, cubed
  • 1/2 cup jarred pimento, finely diced
  • 3 tablespoons mayonnaise (not salad dressing)
  • 1/2 teaspoon dried red chile flakes
  • Salt and pepper to taste
Directions: In a large bowl, mix the cheddar cheese, cream cheese, pimentos, mayonnaise and chile flakes. Using a spatula, mix the pimento cheese until it is smooth and spreadable, about 1 1/2 minutes. Mix in salt and pepper to taste. Store in the refrigerator for at least an hour and up to 1 week.  Serve on your favorite Country Hearth or Village Hearth bread.
