Serves 12 Ingredients:
    • 8 ounce package sliced fresh mushrooms
    • 1 medium sweet red pepper, seeded and diced
    • 1 small onion, chopped
    • 3 tablespoons olive oil
    • 2 garlic cloves, minced
    • 1 loaf Country Hearth English Muffin Toasting Bread, cubed
    • 1 1/2 cups shredded cheddar cheese
    • 1 1/2 cups shredded Swiss cheese
    • 6 eggs, slightly beaten
    • 3 cups whole milk
    • 1/2 teaspoon dry mustard
    • 1/2 teaspoon salt
    • 3 tablespoons fresh parsley, chopped
Directions: Preheat oven to 375°. Grease a 13″x9″ baking dish. Sauté  mushrooms, red pepper, and onion in olive oil until soft. Add garlic and continue cooking for one minute. In a large bowl, toss with bread cubes and cheeses. Place in prepared pan. In a large bowl, mix together eggs, milk, mustard, and salt. Poor over bread mixture. Sprinkle with fresh parsley. Cover and bake for 30 minutes. Uncover and continue baking for 10-15 minutes until the center is firm and the top is slightly browned. Let cool for 10 minutes.
