Serves 12 Ingredients:
  • 8 slices Village Hearth Premium White Bread, lightly toasted
  • 3 cups fresh rhubarb cut into 1-inch pieces
  • 1/4 cup butter, cubed
  • 5 eggs lightly beaten
  • 1 1/2 cups whole milk
  • 2 cups granulated sugar
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • Powdered sugar for dusting
Directions: Cut bread slices in half, then layer in a greased 9″x13″ baking dish. Arrange rhubarb pieces around and under bread. In a large saucepan, heat milk over medium heat until bubbles begin to form. Remove from heat and stir in the butter until melted.  Cool for 15 minutes. Add eggs, sugar, cinnamon and salt. Pour over bread and rhubarb. Let stand for another 15 minutes. Preheat oven to 350°. Bake for 45-50 minutes until golden brown and a knife inserted in the center comes out clean. Let cool for 30 minutes, then dust with powdered sugar.
